“Taikan” – sake with a fresh and uplifting flavor –
The name “Taikan” is derived from “crown” (pronounced “kan” in Japanese) which was worn by a newly promoted military officer in the hopes of achieving success in his career. Connoting success and promotion, the sake named “Taikan” has been known as a celebratory drink that fulfils one’s dreams.
The brewery pays close attention to ingredients, especially organically grown rice, mainly using top-grade Yamadanishiki rice produced in Hyogo Prefecture as well as rice grown in Yamanashi Prefecture.
Using mother water mainly from the mountains of the Minami-Alps, sake is brewed with a dedicate exactness by hand. With such a commitment to perfection, the brewery has won the gold prize 5 times and the silver prize 9 times at the Annual Japan Sake Awards, and has been accumulating prizes at the Tokyo Regional Sake Awards held by the Tokyo Regional Taxation Bureau for 30 years.
